Kangaroo has a popular and robust flavour profile with its unique ‘gamey’ taste. This makes it ideal for the intense flavours characteristically produced in the Salami process. Some foodies even prefer ‘Roo’ over other meats for its tenderness and taste. The robust flavour profile also makes it an ideal pairing for Chilli. Due to the lean nature of the Kangaroo we introduce natural pork fat as part of the curing process. Enjoy it with a full bodied Shiraz alongside hard cheeses and dips with crackers on a grazing board.
