The good news? Our salami is made to last. Thanks to the traditional curing process and natural casing, unopened Goose on the Loose salami is shelf-stable, meaning you can store it in a cool, dry pantry or cupboard away from direct sunlight. There's no need to refrigerate it until you open it. That’s part of the magic of artisan salami—it’s designed to travel, store, and age beautifully without spoiling.

Once you slice into it, things change. After opening, wrap your salami in baking paper, wax paper, or a clean tea towel—never plastic wrap or sealed containers. Salami is a living product. It needs to breathe to maintain its ideal texture and avoid developing off flavours. Plastic traps moisture, which can lead to spoilage or a slimy surface. On the other hand, paper absorbs excess oils while still allowing airflow, helping your salami stay dry and flavoursome.

Place your wrapped salami in the cheese drawer or bottom shelf of your fridge, where the temperature is more stable.
