Kangaroo has a very strong ‘gamey’ flavour which makes it ideal for the intense flavours characteristically found in Salami. The robust flavour profile also makes it an ideal pairing for Chilli. Due to the lean nature of the Kangaroo we introduce natural fat as part of the curing process.

Serve with a creamy soft flavoured cheese such as Brie and a big heavy flavoured drink such as Shiraz, Oaked Chardonnay or a big ‘hoppy’ IPA (India Pale Ale).

    Delicious! Bought this one at a Goose on the loose stall at a market and this will be my 3rd time repurchasing! Slightly gamey, fabulously morish and a little bit of chilli for warmth.

    This is some of the finest salami I’ve ever had the pleasure of enjoying. Of the several from GotL I’ve tried, this is by far my favourite (and that’s really saying something given how good they all are).
