A classic and delectable bread is a versatile winner for snacking, appetisers, or alongside dinner. Whether sliced or torn into pieces, it’s guaranteed to you craving more. If you adore the mouth-watering garlic and herb butter flavours, you’re going to love the well balanced flavours when adding our Goose On The Loose Salami.

Kneaded with an irresistible pull-apart bread including our flavourful Oregano, Italian herb-infused yeasted dough. Customise the filling with your favourite cheese and enjoy this dynamic blend of flavours!

Ingredients 

Dough:

  • 2 teaspoons yeast
  • 1 Tablespoon granulated sugar
  • 3/4 cup (180ml) whole milk
  • 3 Tablespoons (45g) unsalted butter, softened to room temperature
  • 1 large egg
  • 2 and 1/3 cups (291g) gluten-free flour (spoon & levelled), plus more as needed
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 Tablespoons oregano
  • 1 Tablespoon Italian herbs

Filling:

  • Goose On The Loose Salami of choice (sliced)
  • 3 Tablespoon pesto
  • 1/4 teaspoon salt
  • 3/4 cup (95g) shredded mozzarella (or your favourite shredded cheese)

Instructions

  1. Optional Topping:
    • 1 Tablespoon unsalted butter, melted
    • Flaky/coarse sea salt for sprinkling

    Instructions:

    1. Make the dough: In a mixing bowl, combine yeast and sugar. Warm the milk to around 43°C, then pour it over the yeast/sugar mixture. Whisk gently and let it sit for 5-10 minutes until frothy.
    2. Add the softened butter, egg, flour, salt, garlic, oregano and Italian herbs. Beat on low speed for 3 minutes, or mix by hand if you don’t have a mixer. Knead the dough for 1 minute until soft and smooth.
    3. Proof dough in a slightly greased bowl for 60-90 minutes or until doubled in size.
    4. Once the dough has risen, punch it down and divide it into 12 pieces. Flatten each piece into a circle about 10cm in diameter.
    5. Spread 1-2 teaspoons of the filling onto each circle and sprinkle with 1 tablespoon of cheese and two slices of your Goose On The Loose Salami. Fold the circles in half and line them in a greased 22.9cm x 12.7cm loaf pan (tip: stand your pan vertically to make it easier to layer your bread).
    6. Proof dough until soft and puffy for 45 minutes.
    7. Preheat your oven to 180°C and bake the rolls until golden brown, around 50 minutes.
    8. Optional, brush the tops with melted butter and sprinkle with sea salt.
    9. Let the rolls cool for 10 minutes before serving warm and enjoying this flavour-packed delight!
