This isn't just a sandwich; it’s a morning ritual. By swapping out standard ham or bacon for the concentrated, cured depth of an artisan salami, you’re turning a humble bagel into a gourmet start to the day. It’s salty, earthy, and has just enough green to make you feel like you’ve got your life together.


The Essentials

  • 2 Everything Bagels – Or plain, if you’re a traditionalist.

  • 80g Salami – A Fennel & Garlic salami adds a beautiful aromatic note to the eggs, or go for a Chilli variety if you need a wake-up call for your tastebuds.

  • 2 Large Free-Range Eggs – Fried or scrambled, your call.

  • A large handful of Fresh Baby Spinach.

  • Cream Cheese – The thick, schmear-worthy kind.

  • Pickled Red Onions – For that hit of acidity.

  • Butter or Olive Oil – For the pan.


The Method

1. Toast the Foundation

Split your bagels and toast them until the edges are golden and slightly charred. While they're hot, spread a generous layer of cream cheese on the bottom half. The heat will make it slightly melty and perfect.

2. Salami Sizzle

In a medium pan, lightly fry your salami slices over medium heat for about 30 seconds per side. You don’t want them crunchy like a chip; you just want to "wake up" the spices and release those beautiful oils. Pile the warm salami directly onto the cream cheese.

3. The Perfect Egg

In the same pan (don’t wash it—that salami oil is flavour!), fry your eggs. We recommend sunny-side up so the yolk creates a natural sauce for the bagel, but a soft scramble works just as well.

4. The Quick Wilt

Just as the eggs are finishing, throw the baby spinach into the corner of the pan for 20 seconds. Let it just barely wilt in the residual heat and seasoning.

5. Assemble and Conquer

Layer the wilted spinach over the salami, top with your egg, and finish with a few rings of pickled red onion. Close it up and give it a slight squish so the yolk breaks and mingles with the cream cheese.


The Verdict
