Salame al Tartufo is a treat for special occasions in Italy. We make ours with free range pork loin from the Darling Downs and Black Truffle imported from Italy. Black Summer Truffles (Tuber aestivum) spring up between June and October in northern Italy. They are found by specially trained dogs or pigs who sniff them out. They are then gathered by hand. The local mushroom enthusiasts each have a secret spot or two where they hope to find some of their own truffles every year.
This Salami is an ideal partner for hard cheeses like Parmesan or Pecorino and is the perfect accompaniment to a crisp white wine or fruity European style beer.
